Saffron's Spinach Cottage Cheese Parathas

I have had my eye on these green beauties that Saffron made, for a very long time. So, when Coffee announced the Let's Roll theme, I knew this is what I was making. Yet, here I am racing, a little past the deadline and hoping she'll take this in for her round-up!

Saffron walks you through her recipes step-by-step, with perfect pictures to match, in which the green hues radiate off the screen. You only need to read the ingredient list, and see her pictures and you'll know the recipe by heart! I made these for a weekend brunch, but they were an anytime meal - would have been just as good for lunch or dinner. I had to double the amount of flour indicated in the recipe. Maybe this was because my cottage cheese (I bought small curds) had more water in it than was expected. But I kept pouring in flour till the dough reached a consistency that made it easy to roll out.

Last Bite: Paired with pineapple chutney, this tasted amazing! The green does not have to be spinach, coriander or methi leaves would do too. But they'd have a more distinctive flavor than this one. And soft tofu can substitute the cottage cheese. I'll save all those trials are for another event. This one goes out as is to Coffee's Monthly Blog Patrol for March.
